Last summer, I spent part of it exploring Kentucky. My days were filled sampling some of the country’s best bourbon, the nights tasting the culinary explosion in Louisville & Lexington.  Oh those long hot summer nights, sipping Bourbon Lemonade, watching the sunset from the Big Four.  I had never tried Bourbon before last summer.  Life changing.  Suddenly, Bourbon was my leading man in dishes and cocktails, like my Bourbon & Peach Pork Belly Bites. Bourbon goes well with so many different flavors. It’s like the perfect date.

A few weeks ago, a gorgeous box arrived at my door. Who doesn’t love a gorgeous package? Nestled into this parcel were gleaming Lady Alice Apples from Rainier Fruit. Bright, sparkling, firm apples.

 

hmmm, what shall I create with these juicy, sweet, with a hint of tartness Lady Alice Apples? Apple pie on a stick? Apples & Pork?or add them to my Spring Asparagus Salad? The Lady Alice Apple Bourbon Bellini is simple to make. 10 minutes for 6-8 drinks. Portable to take on a picnic or watch the sunset from the Big Four in Louisville. Make the apple puree ahead, storing it in a container. Bring some Apple Bourbon and Champagne and boom – the perfect idea to bring to brunch or on a picnic.  Men will enjoy the bourbon in the Lady Alice Apple Bourbon Bellini, while women will enjoy the refreshing taste of the apple.

Apple Bourbon Bellini Pour with Apple
Instructions
  1. Peel and core 2 Lady Alice Apples.
  2. Place the peeled & cored 2 Lady Alice Apples in blender.
  3. Add water.
  4. Add lemon juice.
  5. Blend until smooth. Add 1-3 teaspoons of water if needed.
  6. Transfer Apple mixture to a small bowl or container with a lid if you are transferring to another location.
  7. Slice the remaining Lady Alice Apple in half. Then make thin full slices from the center.
  8. Remove any seeds from the center of the apple slices.
  9. Place slices in each Champagne Flute, Pressing the slice up against the inside of the glass. or if transporting this cocktail, rub 1/2 of Lemon across each apple slice. Then store slices in a sealable container.
  10. Place a Tablespoon of the apple puree into the bottom of each champagne flute.
  11. Add 1 ounce of apple bourbon into each champagne flute.
  12. Fill remaining champagne flute with sparkling wine.
